Ingredients
  

  • 2 cups 240 g all-purpose flour
  • teaspoons baking soda
  • Pinch of salt
  • 1 cup 198 g granulated sugar
  • ½ cup 99 g vegetable oil (or melted butter)
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
  • 4 medium ripe bananas mashed (1⅓ cups or 303 g)
  • 1 cup 113 g coarsely chopped walnuts

Instructions
 

Preheat the Oven

  • Set to 350°F (175°C).
  • Grease two 8x4-inch loaf pans or line with parchment paper.

Prepare Dry Ingredients

  • In a medium bowl, whisk together:
  • Flour
  • Baking soda
  • Salt
  • Set aside.

Mix Wet Ingredients

  • In a large bowl, whisk together:
  • Sugar
  • Oil
  • Eggs
  • Vanilla extract

Add Bananas

  • Mash bananas until smooth and stir into the wet mixture.

Combine Wet & Dry Ingredients

  • Gently fold the dry mixture into the wet mixture. Do not overmix.

Add Walnuts

  • Stir in chopped walnuts (or preferred add-ins like chocolate chips).

Pour into Loaf Pans

  • Divide batter evenly between the two prepared pans.

Bake

  • Bake for 35-45 minutes or until a toothpick comes out clean.
  • If browning too quickly, cover loosely with foil for the last 10 minutes.

Cool & Serve

  • Let cool in the pans for 10 minutes, then transfer to a wire rack.
  • Allow to cool completely before slicing.
