For the Cake:
- 4 eggs
- 180 g sugar ¾ cup + 2 tbsp
- 120 ml extra-virgin olive oil ½ cup
- 50 ml fresh orange juice ¼ cup
- 2 tbsp Grand Marnier or other liqueur
- Zest of one orange
- 1 tsp vanilla extract optional
- 300 g all-purpose flour 2 ½ cups
- 1 tbsp baking powder
For the Amaretto Orange Glaze:
- 130 g icing sugar 1 cup
- 1 tbsp Amaretto liqueur
- 1 tbsp orange juice
- 1 tsp orange zest optional
Prepare the Wet Ingredients:
In a large bowl, whisk the eggs and sugar together until pale and fluffy (about 2 minutes). Slowly add the extra-virgin olive oil, followed by the orange juice, orange zest, Grand Marnier, and vanilla extract. Mix until combined.
Make the Glaze:
In a small bowl, whisk together the icing sugar, Amaretto, and orange juice until smooth. Add more orange juice if necessary to achieve your desired glaze consistency.
