Italian Hangover Cake with Orange Glaze

Ingredients
  

For the Cake:

  • 4 eggs
  • 180 g sugar ¾ cup + 2 tbsp
  • 120 ml extra-virgin olive oil ½ cup
  • 50 ml fresh orange juice ¼ cup
  • 2 tbsp Grand Marnier or other liqueur
  • Zest of one orange
  • 1 tsp vanilla extract optional
  • 300 g all-purpose flour 2 ½ cups
  • 1 tbsp baking powder

For the Amaretto Orange Glaze:

  • 130 g icing sugar 1 cup
  • 1 tbsp Amaretto liqueur
  • 1 tbsp orange juice
  • 1 tsp orange zest optional

Instructions
 

Preheat the Oven:

  • Preheat your oven to 340°F/170°C. Set the oven rack to the center position. Grease and flour a 9-inch bundt pan.

Prepare the Wet Ingredients:

  • In a large bowl, whisk the eggs and sugar together until pale and fluffy (about 2 minutes). Slowly add the extra-virgin olive oil, followed by the orange juice, orange zest, Grand Marnier, and vanilla extract. Mix until combined.

Mix Dry Ingredients:

  • Sift the flour and baking powder together and add them to the wet ingredients. Mix gently until just combined do not overmix.

Bake the Cake:

  • Pour the batter into the prepared bundt pan.Bake for 40 minutes, or until a toothpick inserted in the center comes out clean. Remove from the oven and let it cool for about 10 minutes before transferring it to a wire rack to cool completely.

Make the Glaze:

  • In a small bowl, whisk together the icing sugar, Amaretto, and orange juice until smooth. Add more orange juice if necessary to achieve your desired glaze consistency.

Glaze the Cake:

  • Once the cake has cooled down completely, pour the glaze over the top. Optionally, add some extra orange zest for garnish. Let the glaze set before serving.
