Ingredients
  

For the Dough:

  • 3 cups warm water
  • 4 Tbsp dry active yeast
  • 1/4 cup granulated sugar
  • 1/3 cup oil vegetable or olive oil
  • 1 Tbsp salt
  • 2 eggs
  • 1/3 cup instant mashed potato flakes optional
  • 7 1/2 cups bread flour

For the Italian Herb Seasoning:

  • 1 Tbsp oregano
  • 2 Tbsp garlic powder
  • 1 Tbsp dried parsley
  • 2 Tbsp parmesan cheese

For the Topping:

  • Shredded Colby and Monterey Jack cheese about 1 cup

Instructions
 

Activate the Yeast:

  • In the bowl of a stand mixer, whisk together the warm water and dry active yeast. Add the sugar, and let it sit for 5 minutes until frothy.

Mix Wet Ingredients:

  • Add the oil, salt, eggs, and instant mashed potato flakes (if using) to the yeast mixture. Mix well.

Add the Flour:

  • Gradually add the bread flour and mix until combined. Use a dough hook to knead the dough on low speed for about 6 minutes until smooth and elastic.

Rest the Dough:

  • Place a clean towel or plastic wrap over the dough and allow it to rest for 10 minutes.

Shape the Dough:

  • Transfer the dough to a floured surface and divide it into 8 equal pieces. Roll each piece into a 12-inch log.

Dredge in Seasoning:

  • Lightly spray the dough logs with water. Roll each log in the Italian herb seasoning until fully coated.

Prepare for Baking:

  • Place the dough logs onto silicone mats or a baking sheet. Score the tops with 3-4 slashes. Allow them to rise in a warm place for 45-60 minutes until they’ve tripled in size.

Add Cheese Topping:

  • Once the dough has risen, sprinkle the tops with the shredded Colby and Monterey Jack cheese.

Bake the Bread:

  • Preheat your oven to 375°F (190°C). Bake for 15-18 minutes or until the tops are golden and the cheese is bubbly.

Cool:

  • Let the bread cool in the molds for a few minutes before removing. Slice and serve.
